After spending time with a group of monks who taught me their ways of cooking vegetarian food, I quickly learned that meat isn't required for a tasty meal. Smoked Stuffed Mushrooms

  • Take the stems out of six portobello mushrooms, chop them, and sauté them with a shallot and two diced cloves of garlic
  • Add that mix to a cup of parmesan and a handful of diced parsley 
  • Stuff the portobellos and smoke them for 30 minutes
  • Now, enjoy! 

Spaghetti Squash Alfredo 


  • Half a spaghetti squash and microwave it for 12 minutes 
  • In a saucepan, combine four pats of butter, ¼ cup of heavy cream, a cup of parmesan, and two teaspoons of granulated garlic 
  • When the squash is done, shred it with a fork and drizzle the sauce on top for a decadent dinner

Veggie Fajitas 

  • Slice a bell pepper of any color, a yellow onion, and one zucchini into long strips 
  • Season with salt, pepper, and red chili powder 
  • Toss in a grill pan and grill over an open flame 
  • Serve with tortillas and any other fajita-friendly condiments such as sour cream and guacamole

Rosemary Roast 

  • Dice up two russet potatoes, two sweet potatoes, and one yellow onion 
  • Throw it all in a roasting pan with a few cloves of garlic, four to six sprigs of rosemary, a drizzle of olive oil, salt, and pepper 
  • Roast at 400 for 20 minutes
  • Mix it up and roast another 20 minutes

Avocado and Bell Pepper Salad 

  • Slice up avocado to your liking, along with a red bell pepper, and six to eight stalks of asparagus 
  • Toss with salt, pepper, soy sauce, and olive oil 
  • Serve cold. Makes for a great side dish

Vegetarian Chili 

  • Buy four to six cans of any variety of beans from navy, yankee, kidney, to pinto 
  • Sauté a yellow onion with one zucchini and one yellow squash 
  • Combine with the beans along with two tablespoons of red chili powder, small can of tomato paste, and 28-oz can of diced tomatoes 
  • Don’t forget a side of corn bread!

Cheese Bread

  • If you enjoy mozzarella sticks but try to avoid deep-fried foods, you will love cheese bread 
  • Slice the bread cheese into strips and fry it in a pan with butter 
  • The cheese will retain its shape and not melt 
  • Serve the fried cheese with your favorite marinara sauce for dipping 

Fridgetata 

  • This is a great option if you need to clean out the fridge 
  • Grab whatever veggies you have on hand and dice them 
  • Add them to three beaten eggs and make an omelet (This option also works when scrambled)
