When it comes to raising and feeding the kids, there is no end to the number of fast or cheap options. A quick, inexpensive meal is as close and simple as running through a drive through. Unfortunately, most “drive through” options fall short as far as health is concerned. Chicken Sausage and Peppers 

  • Buy precooked chicken sausage from your local grocer 
  • In one pan, sauté one red and one green bell pepper
  • When mostly cooked, add the diced chicken sausage and a small can of tomato sauce
  • Serve in bowls or in sub rolls to make sandwiches 
  • Total Prep Time:  25-30 Minutes
  • Ages: 7+

Chicken Asada

  • Dice four boneless skinless chicken breasts and throw them into a freezer bag
  • Squeeze one lime and one lemon into the bag
  • Add ¼ cup of olive oil and a ¼ cup of soy sauce
  • Allow to marinate for at least an hour
  • Use a grill pan when grilling the pre-sliced chicken
  • Serve with cilantro and pinto beans
  • Total Prep Time:  45 Minutes

Kebabs

  • Whatever proteins your kids like will definitely work in kebab form
  • Skewer any seasoned meats you like from shrimp to chicken
  • Cook them on the grill and serve with a variety of sauces such as cocktail sauce or plain mustard for dipping
  • Total Prep Time:  1 hour
  • Ages: 7+

Paninis

  • Take a boring turkey and swiss sandwich and make it just a tad fancier.
  • Add ranch instead of mayo and add spinach for an extra kick of nutrients over boring old lettuce
  • Brown the bread on both sides in a panini press or in frying pan
  • Total Prep Time:  20 Minutes
  • Ideal Age Range: 4+

Egg Cups

  • Don’t worry, no one forgot breakfast! Beat a dozen eggs (or desired quantity, adjust ingredients accordingly) with a splash of milk. 
  • Add ¼ cup of sharp cheddar cheese along with some diced broccoli or chopped spinach
  • Portion the mixture out into 12 cupcake wrappers
  • Bake at 350 for 15 minutes or until the tops are brown. Makes an easy grab and go breakfast 
  • Total Prep Time:  25-30 Minutes

Taco Bowls

  • Lean ground beef is cheap and easy to find
  • Add two tablespoons of taco seasoning to a pound of ground beef and brown in a frying pan
  • Serve in bowls topped with cilantro, cheese, sour cream, and salsa
  • No shell needed and only one pan dirtied
  • Total Prep Time:  45 Minutes
  • Ideal Age Range: 4+
  • Meal Category:  Lunch, Dinner


Chicken Stroganoff

  • This slow cooker recipe is free of hassle
  • Place four boneless skinless chicken breasts in the slow cooker
  • Add a cup of beef broth and two cups of mushrooms
  • Cook for four to six hours
  • When complete, shred the chicken and add ¼ cup of sour cream
  • Can be served as is or over a bowl of egg noodles or rice
  • Total Prep Time:  6 hours (this meal requires some thinking ahead in order to cut down on prep time when it’s time to eat!)
  • Ideal Age Range: 7+

Lasagna Bowl

  • Season one pound of lean ground beef with two tablespoons of your favorite Italian seasoning
  • Brown the beef thoroughly 
  • Add two cups of your favorite marinara sauce, and mix and serve in bowls
  • Top with shredded mozzarella and a dollop of ricotta cheese 
  • Total Prep Time:  30-45 Minutes
  • Ideal Age Range: 4+
  • Meal Category:  Lunch, Dinner
