As a person with a family full of diabetics I can attest firsthand how challenging it can be to manage depending on your lifestyle, age and other factors. The good news is that there have been many advancements in medicine that will one day all but remove diabetes from our lives. In the meantime we must find the best ways in which we can offset the negative impacts it can have. In this article we discuss some tasty recipes that are diabetic friendly, and easily made from the comfort of your kitchen.


It is always a relief when a serious medical diagnosis does not affect your ability to enjoy your favorite foods. With just a few small modifications, you can continue to indulge in all of the foods that you love. When it comes to pizza, burgers, and tacos, the crust, bread, and shell are not even the best part. Skip the refined carbs and stick with the good stuff. Now let's dig in!



Fathead Pizza 


Any diet change that does not exclude pizza is a win in any book. “Fathead” crust is made with almond flour, egg, and mozzarella cheese. Since it has no flour, it will not require as much insulin to break down the carbohydrates that are found in traditional pizza crust. Top your pizza with any of your favorite traditional toppings such as pepperoni, sausage, bell pepper, or mushrooms. 


Zoodles Alfredo


Though no one knows if people love zoodles because they are tasty or because they are fun to eat, it is a fact that they are far lower in carbohydrates than pasta. Heat alfredo sauce, either store bought or homemade, in a saucepan. Spiral a zucchini and add it to the sauce. For extra protein, add precooked shrimp.


Lettuce Wrapped Tacos


Ditch the high carb taco shell or the corn tortilla. Instead, use red leaf lettuce in place of a shell. Add your favorite taco meat to a lettuce wrap and top it off with all of your favorite taco toppings. With the savory meat, salsa, cheese, cilantro, and guacamole, you will not miss the shell. 



Tuna Salad and Sweet Peppers


If you are looking for a quick lunch option that can be made ahead to enjoy all week, tuna salad is perfect. Melt a quarter cup of cream cheese in the microwave. Open and drain a can of tuna. Mix it with the cream cheese along with a dash of granulated onion and garlic. Mix thoroughly and chill. When ready to eat, scoop the tuna salad with sliced sweet peppers. 


No Bun Burger


Even if you are managing diabetes, that does not mean you can’t enjoy a juicy, grilled burger. You definitely can participate in that next big cookout. Top your burger with all of your favorites including sliced onion, tomato, cheese, and a pickle. Wrap your burger in lettuce to keep those hands clean when eating it. That high carb bun is overrated anyway.
